WHY THIS RECIPE WORKS

To avoid a gritty or sandy texture, we found that, after we combined the dry ingredients and then whisked them into boiling water and stirred in some butter, we needed to let the batter sit for 15 minutes to let all the grains to soften. To ensure that they didn’t fall apart when flipped in the pan, we let the johnnycakes set completely on the first side before gently turning and flattening them so they would be evenly cooked throughout.
